The Alliance Osteria
After the huge success at the 2010 Salone del Gusto, the Alliance Osteria is reopening at Slow Fish, with 20 cooks taking turns in the kitchen to prepare delicious and inventive seafood dishes using Slow Food Presidia products.
Every day an international guest chef will be cooking Slow Food Presidia fish alongside Italian cooks. The Alliance between chefs and the Presidia brings together 254 restaurants and osterias in Italy who are working to support Slow Food’s biodiversity-preservation project. Their menus regularly feature dishes prepared with Presidia products, marked with the logo ![]()
