Presidia at Slow Fish
The Slow Fish Market will be hosting around 20 Slow Food Presidia dedicated to fish, seafood and salt.
Come find out more about unique products like Oosterschelde lobster from the Netherlands, Møre og Romsdal salt cod from Norway, Orbetello bottarga from Tuscany and Cervia salt from Emilia-Romagna. Concrete and virtuous examples of communities who make their living from fishing and the sea without depleting the environment and fish stocks, these small-scale fishers and salt harvesters use ancient and sustainable techniques.
Through the Presidia, Slow Food supports quality food products at risk of extinction, preserves ecosystems and biodiversity, recovers traditional processing methods and safeguards native breeds and local plant varieties.
