Cavolfiori a merenda
New for 2011, Slow Fish presents Sunday lunch prepared by Cavolfiori a Merenda. The mobile gastronomy association, founded by a group of students from the University of Gastronomic Sciences in Pollenzo, will be serving lunch on the quay next to the exhibition center, looking out over Genoa’s port.
The lunch will exemplify all the good practices that guide the Cavolfiori philosophy: “Real cooking, free from special effects, preferring technique and knowledge of the product. For you we seek the forgotten, the lesser cuts, the freshest vegetables, to bring to the table flavors as they should be. We promise we won’t make you eat the same usual ten fish, but will look to the immensity of the sea.”
