Theater of Taste

A spectacular show is always guaranteed at the Theater of Taste as legendary Italian and international chefs perform their pièces de résistance, cooking live for the audience. Video cameras will follow them as they move around the demonstration kitchen, capturing every step and revealing their culinary skill and secret tricks. Ingredients will be chosen for their seasonality, freshness and sustainability, and the final dishes will be paired with specially selected wines. The focus will be on the Mediterranean, with chefs from Italy, France and Spain, joined by an Irish representative from the Atlantic coast.

Participants include chef Gaël Orieux from the Michelin-starred August in Paris, spokesman for the French-English-Italian campaign Mr. Goodfish, whose slogan is “Good for the sea, good for you.” Launched in March 2010, the initiative wants to encourage responsible and knowledgeable consumption of fish, providing cooks and restaurateurs with a detailed list—including places and suppliers—of the best species to choose based on the season and the actual quantity available, thus reducing costs (local purchases with fewer food miles) and promoting the regeneration of endangered fish stocks.
