Markets, Menus and Cooks
To appreciate fish, first you have to understand it. From the fish market to the kitchen, this activity aims to point participants towards the “right” choices, looking at food habits, laws and regulations, fish storage and distribution and providing useful information for buying and tasting fish. Led by a cook and culinary expert, visitors will learn how and what to choose, explore the different stages of preparation and finally taste delicious dishes based on underused fish species. Educational and entertaining, this activity has been organized with the assistance of the Slow Food Convivium at the University of Gastronomic Sciences.
